Peanut Butter Pretzel Bars
OK, the truth is, we’re not always healthy around here. Like you, we love indulging every once in a while. I’ve always had a passion for baking, but since the baby, I just don’t have time to sit around and wait on 4 dozen cookies to bake. That’s why we couldn’t help but try making these peanut butter pretzel bars.
The best thing about this recipe, is that there is no baking involved! It’s so incredibly easy! And incredibly delicious! This recipe was adopted from Food Network, Trisha’s Southern Kitchen.
**Please note: the recipe calls for 1 ½ cups of powdered sugar, which I decided to omit. In fact, I couldn’t imagine including the sugar because the recipe also calls for milk chocolate chips, which are very sweet anyway.
1 1/2 sticks (12 tablespoons) butter, melted
2 cups pretzel rods, crushed into crumbs – I used my food processor.
1 cup plus 1/4 cup smooth peanut butter
1 1/2 cups milk chocolate chips
Crush the pretzels. I find it best to use a food processor. I’m sure a plastic bag and rolling pin would do just fine too.
In a medium bowl, add the melted butter, pretzel crumbs, and 1 cup of the peanut butter and stir together until well combined.
Press the mixture evenly into the bottom of an ungreased 9-by-13-by-2-inch baking dish.
Combine the chocolate chips and the remaining 1/4 cup peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate and peanut butter are melted and smooth; two intervals should be enough.
Mix to blend, then spread over the peanut butter-pretzel layer. Refrigerate for at least 2 hours before cutting into squares.
