Low Carb Yogurt Parfait
I absolutely love eating yogurt in the morning. It’s light, yet filling, especially with nuts and chia seeds, which add protein. In this low carb yogurt parfait, I add stevia for sweetener and strawberries for their flavor. Another reason I love it, is because it gives me that sense of eating something sweet without ruining my whole eating plan.
I’ve been following my low sugar eating plan for the past month and have had amazing results! This isn’t just for Sundays, in fact, I always bring this mixture or something similar with me to work in the morning! I use Pyrex bowls and an ice pack to keep it cool.
- 1 c Plain non-fat yogurt
- 1 packet of Stevia
- 1 tsp chia seeds
- 6 rough chopped pecans
- 1 sliced strawberry
- One cup of non-fat yogurt and add some of your favorite toppings. For this, I added a packet of stevia, chia seeds, rough chopped pecans, and a sliced strawberry. Easy at that!
