Jazz up your Vegetables!
Tired of the same, boring side vegetable over and over? Yeah, we were in the same position as you. There’s just so many times you can have a side of corn or broccoli in a week until you just get tired of it and ditch vegetables all together.
Instead of ditching vegetables, we decided that it would be better to jazz them up a little bit. This is what we usually cook up, or a variation of it on Sunday evenings.
Carrots, Zucchini, and Potatoes. Look at those bright colors! So you’re still probably saying, ‘I’ve had all of these before, nothing special.’
Here is how we change nothing special into something very good. Stick with us here, it’s not going to be as difficult as you think.
Ingredients and Directions:
1 large Zucchini
- Sautéed in coconut oil, salt, pepper, and onion powder.
6 Yukon Gold potatoes
- Mashed with 1/3c Neufchatel cheese, 1tbsp of butter, a small amount of almond milk, and a dash of garlic powder.
- Cooked, melt 2tbsp butter over top and sprinkle with 3tbsp brown sugar.
